Vegetarian Minimize
Pineapple, peaches and bananas are grilled and served with fresh berries and cottage cheese.

Sugar snap peas are still in season so we continue to take advantage of them.  This salad has feta cheese and roasted red onions as well.
New red potatoes are steam cooked 'al dente' and combined with garlic and apple cider vinegar in this salad.  Sour cream is used instead of mayo.
Salad with halved grape tomatoes, feta cheese cubes, red onion and cucumber.
Sugar snap peas and asparagus are steamed and then mixed with roasted grape tomatoes, grilled mushrooms and onions.  Served with romaine lettuce.
Penne baked with a mushroom tomato sauce.  Grilled eggplant, red bell peppers and peas in the filling.  Did I mention cheese?  Mussarella and parmigiano-reggiano on top.
A tasty putanesca pasta.  Olives, capers, garlic, fresh and sun-dried tomatoes with buffalo mussarella cheese.  Topped with fresh basil and served with a Rossi de Montalcino red Italian wine.
Cruncy salad with celery, arugula, peas, button mushrooms, white cheese, raisins, bananas, pine nuts and grilled onions.
Italian style bread salad with roasted red bell peppers, tomatoes and toasted croutons.  Balsamic vinegar dressing.
Corn, red bell peppers, red onions, sour cream and two kinds of cheeses make up this salad.  Did I mention jalapeno pepper from the garden?

Green Salad with Goat Cheese
Baked Fennel is the basis for this salad.  Made with lettuce, goat cheese, arrugula and tomatoes.
Vegetarian lazagna for dinner tonight.  Veggies were grilled zuchini and eggplant.  Not too fond of 3 layers of ricotta.  One would have been enough.
Fresh mango with red bell peppers and diced jalapeno pepper
Toasted Italian bread with halved grape tomatoes, basil and shaved parmigiano reggiano cheese.
Cracked bulgar wheat (Taboule) with lemon juice is served on a bed of chopped lettuce and topped with grated carrots, tomatoes and cucumbers.
