More fresh fish from our friend Sid in Alaska.  This time a nice filet of halibut is topped with parmigiano-reggiano seasoned bread crumbs, capers, black kalamata olives and roasted tomatoes.  Served atop a bed of linguini tossed with pesto from basil in the herb garden.  Felt like a nice red wine so opened a bottle of Rocca Felice Barolo - a full bodied red.  Heavenly meal for a Saturday night.

Instead of pasta, thin sliced and grilled eggplant is used in this lazagna.  Italian sausage, ricotta cheese, bufala muzzarella cheese and basil are used in the tomato sauce.  Served with thin spaghetti.
Baked and breaded tilapia tops parpardelle with pesto sauce.  Fish is topped with diced tomotoes, red onions, capers and black olives.
Tomato sauce with fresh tomatoes combined with capers and black olives are smothered atop broiled mahi-mahi filets and served over thin spaghetti.
Our second dish with the wonderful Alaskan Coho salmon received from our friend in Anchorage.  A large filet is baked and then topped with a shitake mushroom sauce and served on a bed of thin spaghetti.
Grilled chicken breast and Italian style sausage are mixed with sugar snap peas, onion and halfed fingerling potatoes atop a bed of thin spaghetti pasta.
Re-encountered a childhood friend online a couple of months ago.  Sid is lucky enough to call Anchorage, AK his hometown for the last 25 years.  This past week he was generous enough to share some of his recent salmon catch by sending some fresh Coho and Sockeye filets by overnight courier.   The first result of his special gift is shown here - Baked Coho.   After having been accustomed to eating farm raised salmon for the last couple of years, I was anxious to find out if there really IS a difference in taste.  The verdict is in.  Yes, Alsakan salmon tastes a lot better than farm raised.  No surprise here - It's "salmonier".  Filets were served atop a bed of couscous with roasted rosmary fingerling potatoes, sugar-snap peas and asparagus.   Thanks again buddy for this present.
Strips of beef are sauteed with balsamic vinegar and chicken broth, mixed with sugar snap peas, asparagus, button mushrooms and red bell peppers are piled atop a bed of penne al dente.
Rotisserie chicken is topped with mozzarella cheese and bread crumbs and baked until golden brown.  Serverd with fresh tomatoes and asparagus atop a bed of farfalle pasta.
Grape tomatoes, red onion and garlic are roasted in the oven and then mixed with mozzarella and parmigiano-reggiano cheeses.  Pasta tonight was penne.
Scallops go well with just about anything.  Dinner this evening combined them with seasoned bread crumbs and fusilli pasta.
Leftover BBQ pork is turned into a yakisoba for lunch today.  Angel hair pasta, grated carrots, red bell peppers, peas, green onions, sesame seeds and sugar snap peas are mixed with a light sesame oil based tomato sauce that used the rest of the BBQ sauce.
Just 5 ingredients - garlic, onion, white wine, clams, and linguini make up this excellent and simple Italian favourite.  Served with Barbera d'Asti red wine.
Red Snapper is the star ingredient in this putanesca sauce with garlic, black olives, anchovy paste, and tomato sauce served with linguina pasta.
Thin spaghetti is cooked 'al dente' and tossed with oven roasted whole garlic cloves and grape tomatoes.   Topped with parmisiano-reggiano and arrugula.
Penne baked with a mushroom tomato sauce.  Grilled eggplant, red bell peppers and peas in the filling.  Did I mention cheese?  Mussarella and parmigiano-reggiano on top.
Used diced heart of palm, diced dried apricots, slivered almonds and green onions in this pasta salad.
Beef Yakisoba with 11 vegetables. Count em:  broccoli, sugar snap peas, yellow onions, red bell peppers, yellow bell peppers, green bell peppers, mushrooms, cabbage, green onions, celery and carrots.  Served with Angel Hair pasta.
A tasty putanesca pasta.  Olives, capers, garlic, fresh and sun-dried tomatoes with buffalo mussarella cheese.  Topped with fresh basil and served with a Rossi de Montalcino red Italian wine.
Grilled salmon is served with fresh basil pesto and fettucini.  Topped with diced tomatoes and capers.
Bread crumbs seasoned with capers, garlic, roasted tomatoes, asparagus and mushrooms top this grilled tilapia dish.
Quick chicken stirfry with a few grilled shrimp.  Pasta is regular thin spaghetti.  Uses all bell peppers and a tomato sesame seed oil based Asian sauce.
Breaded this salmon with Panco (Japanese style) bread crumbs and baked in the oven.  Served with orzo pasta and grilled tomatoes and eggplant with a balsamic vinegar dressing.

Salmon and Orzo Pasta
Wanting to try the pasta from Pappardelle's that we bought last weekend at the Winter Park Farmer's Market.  We were not disappointed.  Had the butcher cut a couple of extra thick beef shanks (couldn't find veal) while doing the weekly grocery trek.  After a couple hours in the oven the osso bucco was ready.  Pureed the carrot, celery and onion trio and returned them to the pan so no need to thicken the sauce with flour or cornstarch.  Dish was topped with gremolata - a spicy combination of chopped Italian parsley, minced garlic and lemon zest.   The wine for this evening?  Barbaresco (made from the Nebbiolo grape).  Have tried Barolo, but this was our first Barbareco.  Nice pairing.
Putanesca made with cod.  Served with linguini and a mushroom and celery salad.
Still had some pork left over from the BBQ the other day so made a yakisoba this afternoon.  Used angel hair pasta instead of ramen noodles.  Stir fry veggies inclulded broccoli, sugar snap peas, onions, red bell peppers, and fennel.
Inspired by a meal we ate this weekend at a local Italian restaurant, this chicken dish features fusili pasta and warm goat cheese.  The cheese pairs well with the dried tomatoes and fresh veggies.
Got home late tonight so decided on a quick pasta. This one uses sweet italian sausage with fresh tomatoes and tomato sauce.  Buffalo mussarela cheese finishes off this dish.

Cod Pasta with Red Bell Peppers and Olives
Still had some BBQ pork leftover from Monday so it was used in this yakisoba, an oriental dish using some soy sauce and sesame oil.  It is served with stir fry snow peas on a bed of pasta.
One of our favorite pastas, linguini al vongole, or clam linguini, is simple to make and a delight to eat.  If possible, always make with live clams.  They taste much stronger than their canned cousins.
Like dry pastas and today's is made with home made bread crumbs, parmesiano-reggiano, roasted cherry tomatoes, garlic, and pine nuts.
Mahi mahi is topped with diced tomatoes, red bell peppers and capers.  Served with thin spaghetti.
Sliced grilled chicken is topped with mushrooms in a BBQ-like sauce and served atop a bed of orzo and multi-colored bell peppers.
Wanted a dry pasta tonight so prepared this rotini with scallops and seasoned bread crumbs.  Tomatoes, garlic and onions are roasted in the oven before mixed in with the pasta.
The ziti rigate pasta sucks up the tomato sauce in this simple Italian meal.  Ground turkey meatballs accompanies.
