Cleared out the refrigerator to make this paella.  Used chicken legs, mushrooms and chorizo in the pan.  (The paella police weren't around so we made a non-traditional  one)

Some blah-blah chicken leg quarters get kicked up a notch with our lite BBQ sauce.  Baked  fries with Russett and Sweet potatoes.
Had some leftover chicken from last night so invented a dish to serve atop broiled sourdough toast.  Topped with a bit of the home-made BBQ sauce - also from last night.
Chicken and Italian Sausage are the meats in this version of the traditional dish.
Found some white and black sesame seed spice a couple weeks ago and tested it on this chicken dish.  Not a big fan of whole wheat pasta, prefer regular, but had some in the cupboard so we gave it a go.  Has a different bite to it.  Served with broccoli, fresh asparagus, and peas.
Inspired by a meal we ate this weekend at a local Italian restaurant, this chicken dish features fusili pasta and warm goat cheese.  The cheese pairs well with the dried tomatoes and fresh veggies.

Throw together leftover chicken and some sausage inside bread dough and what do you get?  Our stuffed bread.  A breakfast favorite in our house.

Best part about this Chicken Salad Sandwich is the fact that there is no mayo.  Green apples add tartness and yougurt is the "glue".

Made a chicken pot pie this afternoon.  Instead of pastry dough we used french bread croutons - a bit more calorie friendly than the original.
