My favorite risotto - dried porcini mushrooms with carnaroli rice.  Served with an Italian Barolo (Cancello del Barone Riserva 2000).Porcini Risotto Baked mahi-mahi topped with grilled vegetable caponata.  Served with oven baked fries.Mahi Mahi Fish and Chips More or less traditional Spanish paella for dinner tonight.  Key ingredient is chorizo - a cured pork sausage made with dried, smoked red peppers.   Grilled chicken, peas and saffron are added to this tasty rice dish.Spanish Paella
A few stoppers from the cork jar.  Wine Corks Grape tomatoes, red onion and garlic are roasted in the oven and then mixed with mozzarella and parmigiano-reggiano cheeses. Scallops go well with just about anything.  Dinner this evening combined them with seasoned bread crumbs and fusilli pasta.Scallops and Fusilli Grilled salmon topped with sesame seeds.  Served with white rice, asparagus and roast potatoes.Grilled Salmon and Potatoes Breaded frozen tilapia is baked in the oven and then topped with roasted garlic and cherry tomatos. Baked in a pie form, this giant ground turkey Kibe is served with yougurt, cucumbers and grilled onions and topped with diced tomatoes and green onions.Baked Kibe Chicken is cooked together with rice in the same pan for today's lunch. Shrimp, clams and fish combine in this semi-Italian style meal.  Served with 7 grain rice.Cioppino Our favorite risotto is made with dried porcini mushrooms and Parmisiano-Reggiano cheese. Got back later tonight so threw a quick store bought roasted chicken together with some italian sausages on top of a bed of letttuce and some bell peppers.  Served with a baked french baguette.Chicken and Sausage Goat cheese, eggplant and red bell peppers make up this flatbread California style pizza for today's breakfastGoat Cheese Pizza Sugar snap peas are still in season so we continue to take advantage of them. Barbeque pork shoulder with green salad and white rice.BBQ Pork Shoulder Found some frozen red snapper at Costco so thought that we'd give it a try.  Not too bad in this muqueca (Brasilian fish stew).  Lots of carrots, red and green bell peppers, shrimp, and a little coconut milk.Muqueca Fish Stew Leftover BBQ pork is turned into a yakisoba for lunch today.  Angel hair pasta, grated carrots, red bell peppers, peas, green onions, sesame seeds and sugar snap peas are mixed with a light sesame oil based tomato sauce that used the rest of the BBQ sauce.Pork Yakisoba
Cassava (Mandioc/yuca) flour and parmigiano-reggiano cheese go into these muffins.Chimangos French baguette is baked in the oven and then stuffed with tomatoes, arugula, olive tapenade and havarti cheese.Baguette Sandwich Assorted berries, nectarines and peaches are cooked in a foil pouch with a bit of apple juice.  Topped with Greek yougurt and mint.  Sunday breakfast.Fruit Pouch
